The Red Shiboridashi Set is a handmade Tokoname teaware set designed for premium Japanese green teas like gyokuro, kabuse sencha, hand-rolled sencha and other rare shaded teas. With its small 70ml capacity, rich red clay and lid-filter design, it concentrates the infusion into smooth, dense and flavorful cups.

So verwenden Sie das Rotes Shiboridashi-Set

Preparing tea with the Red Shiboridashi Set is simple, but it is best used with premium leaves that benefit from a concentrated infusion. Add the leaves, pour in a small amount of water, allow the tea to brew, then use the lid to gently filter the leaves as you pour into the matching cups.

  • Schritt 1

    Heat the water according to the tea you are preparing. For gyokuro, we recommend around 60°C / 140°F, while kabuse sencha and hand-rolled sencha can be brewed slightly warmer depending on your taste.

  • Schritt 2

    Add around 5 grams of tea leaves to the shiboridashi. Because this set has a small capacity of about 70ml, it is ideal for preparing a rich, concentrated cup rather than a large everyday infusion.

  • Schritt 3

    Pour in enough water to cover the leaves and allow them to open slowly. The flat shape of the shiboridashi gives the leaves space to spread out, helping them release more sweetness, umami and aroma into the liquor.

  • Schritt 4

    Place the lid slightly tilted on top and pour carefully into the cups. The shiboridashi has no built-in metal filter, so the lid itself acts as the filter, holding back the leaves while allowing the concentrated tea to flow out.

  • Schritt 5

    After the first infusion, the leaves can still be used for several more brews. Keep the same water temperature, add fresh water, and reduce the brewing time to around 20 seconds for each following infusion.

  • Schritt 6

    You can also use this Red Shiboridashi Set for small cold brews. Add your tea leaves, pour in cool water and let the leaves steep slowly. This method works especially well with shaded teas, producing a sweet, refreshing and low-bitterness infusion.
