Superior ist unsere Spitzenklasse: Blätter der ersten Ernte ( ichibancha ) aus kleinsten Chargen, die besonders lange beschattet und sorgfältig ausgewählt werden. Das Ergebnis ist ein besonders intensives Umami-Aroma, keine wahrnehmbare Bitterkeit und ein vollmundiger, samtiger Körper – ideal für Koicha, die dickflüssige Zubereitung, und auch als Usucha ein Genuss.

Der Matcha Kiwami Sakamoto ist aufgrund seines hervorragenden Geschmacks in der höchsten Qualitätsstufe eingestuft. Die Seimei -Sorte verleiht ihm eine brillante Farbe, elegante Süße und tiefen Umami-Geschmack. Dieser matcha eröffnet mit einem intensiven Umami-Aroma, das sich rasch steigert, bevor er in einen weichen, stärkehaltigen Abgang mit subtilen Noten von Hiika und Kakao übergeht.

Matcha Kiwami Sakamoto wird aus Seimei hergestellt, einer modernen Sorte, die für ihre leuchtende Farbe, ihren klaren Umami-Geschmack und ihr außergewöhnlich reines Aroma geschätzt wird. Dank ihres gleichmäßigen Wachstums und der Zartheit ihrer Blätter eignet sich Seimei ideal für eine lange Schattierung, wodurch sich die Aminosäuren konzentrieren und ein cremiger Körper mit ausgeprägter Süße entsteht. In der Schale verwandelt sich der Matcha in einen dichten, seidigen Schaum und entfaltet helle, präzise Aromen mit minimaler Adstringenz und einem erfrischenden Nachgeschmack.

Seimei ist eine moderne Teesorte, die aufgrund ihres raffinierten und reinen Geschmacksprofils immer mehr Anerkennung findet. Sie ist robust im Anbau und entwickelt dabei eine elegante Süße und einen tiefen Umami-Geschmack. Für matcha bietet Seimei sowohl eine brillante Farbe als auch einen intensiven Geschmack und ist somit ideal für Premium-Tees wie Kiwami .

Dünn geschlagen wie Usucha, 2 g matcha ergeben eine Schale.

  1. Den Bambusbesen 2–3 Minuten vor dem ersten Gebrauch einweichen, für den täglichen Gebrauch 30–60 Sekunden.
  2. Sieben Sie 2 g (1 TL) matcha , etwa 2 chashaku -Messlöffel, in Ihre Schale.
  3. Wasser auf 70°C / 160°F erhitzen.
  4. 10 ml (1 EL) Wasser hinzufügen und zu einer glatten Paste ohne Klumpen verrühren.
  5. Geben Sie das restliche Wasser hinzu – insgesamt 80 ml / ⅓ Tasse.
  6. 15–30 Sekunden lang in schnellen W Bewegungen mit dem Schneebesen verquirlen.
  7. Genießen Sie Ihren matcha , spülen Sie anschließend den Schneebesen ab, lassen Sie ihn an der Luft trocknen und bewahren Sie ihn in seinem Halter auf.

Matcha Kiwami Sakamoto wird in der Shibushi Region von Kagoshima angebaut, einem Gebiet mit fruchtbarem Vulkanboden und warmem, subtropischem Klima. Discover the art of preparing the perfect bowl of matcha, from choosing the right tools to mastering the traditional whisking technique.

Prepare

Soak the bamboo whisk. First use: 2–3 minutes · Daily use: 30–60 seconds. Sift 2 g (1 tsp) of matcha, or 2 chashaku scoops, into the bowl.

Make the Paste

Heat water to 70°C / 160°F. Add 10 ml (1 tbsp) of water and combine into a smooth matcha paste with no clumps.

Whisk

Add the rest of the water, 80 ml / ⅓ cup in total. Whisk in quick W motions for 15–30 seconds.

Enjoy & Care

Enjoy your matcha. Rinse, air-dry and store the whisk on its holder.

Over decades in the tea industry he has found a sustainable way to make flavourful gyokuro and matcha without pesticides or chemicals, using an organic fertiliser he developed himself from organic compost and a sedimentary rock mulch.

Nio teas ist seit Längerem mein Lieblingsladen für hochwertigen Tee, und ich wurde noch nie enttäuscht. Die Tees sind von exzellenter Qualität, aber besonders hervorheben möchte ich den Kundenservice. Das Nio-Team war jedes Mal sehr freundlich und hilfsbereit, wenn ich ein Problem hatte. We ship from warehouses in the US, the EU and Japan — whichever is closest to you. US and EU orders arrive in 4–12 business days; the handful of countries served from Japan take around 10. Business days count from dispatch rather than from when you order, and exclude weekends and public holidays. You'll get a tracking number by email the moment your parcel leaves the warehouse.

We only buy from fields grown without pesticides or chemicals. We ask each farmer directly how they manage their land, visit the plantation and processing facility ourselves, taste every harvest before committing, and check that the biodiversity around the fields is alive. Small family farms don't always carry paperwork — so we verify it in person instead.

Japanese green tea covers an enormous range, and choosing online isn't easy. If you've tried yours and it isn't for you, email info@nioteas.com within 30 days with your order number and a line on what you didn't enjoy. We'll send a different tea of equal or lower value, free. Nothing to post back — keep it, share it, or try brewing it cooler. Once per order.

Email info@nioteas.com within 30 days with your order number and a photo. We'll approve it, cover the return postage with a prepaid label or a reimbursement, and refund you — no restocking fee. Refunds go to your original payment method within 2 business days of the return reaching us; your bank may take another 5–20 to show it.

Unopened items in their original packaging can be returned within 30 days. Tea is sealed for hygiene, so opened packs can't come back — but the swap above covers exactly that situation. Return postage is yours unless the item arrived damaged, defective or incorrect.

Orders to the US and EU ship domestically from our local warehouse, so there's no customs charge and no duty. A small number of destinations are served from our Japan warehouse, where your own customs authority may apply import duty, VAT or a carrier handling fee on delivery. on the first sip, it came across as umami-forward and creamy with no bitterness. i did notice a little bit of astringency at first, but it wasn't too strong, after adding a little more milk and a touch of agave, the astringency faded off and the whole cup became much more balanced. the added sweetness really helped bring out its creamy and umami character, while the milk softened the slight astringency. the texture is creamy, with a pleasant umami finish that doesn't turn bitter or overly drying. i also really love the aroma of this matcha, it smells very creamy and inviting, which makes the whole experience even better. and of course, the color is such a beautiful, vibrant green that makes it look just as good as it tastes.

I like the savoury and umami aroma which has almost spicy-tomato sharpness. I found it less complex than the Kagoshima matcha sae Sakamito (which I preferred). Overall profile is smooth, rounded and creamy. Vegetal notes come later and it finishes clean, refreshing, a little granular and dry. I look forward to trying the matcha Zen Sakamito in the future although at a much higher price point. Whilst I enjoyed it very much I would buy Kagoshima matcha sae Sakamito again rather than this

My wife and I are new to matcha, and we were delighted when we found the Nios website. The Tasting Notes helped us choose the Yame Okumidori Miyakoand Kiwami Sakamoto matchas. This Sakamoto Kiwami matcha is very special, it has deep umami, with almost zero astringency, but very interestingly it has pleasant earthy/mineral notes, the organic fertilizer and volcanic soil of Kagoshima must be working their magic on this specific tea. It has almos NO marine/savory notes (e.g. seaweed) like other high umami matchas from places like Uji (especially on cultivars like uji-hikari or gokou), but in my mind that's a good thing, it's an interesting and highly appealing alternative to bold umami. Also very creamy. God bless Mr Sakamoto 🍵🙌🙏.

This matcha has been one of the more unique I have tried. Kiwami means "Pinnacle" and on the back label it states it is "gyokuro powder" which is exactly what it tastes like. I prepare mine even less concentrated than usucha, and it is still deep green and smooth with a hearty green tea flavor. While I can't say it's my all time favorite, this one is very good, unique, intentional, and very high quality. It seems Mr. Sakamoto had something special in mind when creating this one. I'm glad I tried it and appreciate the skill that went into making it.
